Cheesy ScramBleD Eggs • When it comes to going meatless, you really can’t beat eggs. They’re full of protein, they’re inexpensive and easy to prepare, and they’re versatile and delicious. Learn to scramble eggs and you’ll be ready to make your own breakfast, lunch, or dinner—or even an after-school snack.

EVERYTHING… BEANS • We love beans because they’re delicious and full of protein, fiber, and vitamins. Plus, whether you start with dried beans or use beans from a can, they’re not very expensive—and there are so many kinds and colors! White beans, pink beans, red beans, brown beans, black beans, speckled beans, and garbanzo beans (also known as chickpeas). As far as we’re concerned, a can of beans means you’re never far from a good meal.

PiZZa Beans • As soon as we cover something in red sauce and melted cheese, everyone gets excited. And these tender white beans are no exception! Use the biggest beans you can find for this recipe—butter beans or large limas are our favorite. But if all you’ve got are smaller white beans (great northern, cannellini, or navy), those will be fine too.

RoasteD Falafel ChickPeas • Falafel is a classic Middle Eastern dish of fried chickpea balls that are usually served in pita bread. Here, we’re using the flavors of falafel (cumin and coriander) to make an easy, crunchy snack. If you want to double the recipe, go ahead—but don’t make more than you plan to eat soon, since they’re really best when they’re fresh.

Classic Three-Bean SalaD • This is our version of the classic picnic salad. We love it because it’s easy, portable, and adaptable—just use whatever canned beans you have! They are all perfect for this dish. Kid Recipe Tester Linnea described this salad as“very fresh” and recommends adding a little grated cheese.

Four-Bean Chili • There are so many different beans in this hearty, zesty pot of chili that nobody will miss the meat. Of course, if you only have 2 or 3 kinds, that’s fine too—but the more the merrier! Kid Recipe Tester Amine thought the hardest part of this recipe was“opening all the cans,” and his whole family thought the chili was delicious.
